Tofu Egg Salad

INGREDIENTS 1 Block Extra Firm Tofu ½ cup Vegan Mayonnaise ½ Cup Carrots, grated ½ cup red onion, diced ¼ cup olives sliced 3 tbsp fresh parsley finely chopped 2 tbsp Nutritional yeast 1 tbsp Dijon Mustard ½ tsp Turmeric 1/8 Tsp Cayenne Salt and pepper to taste METHOD 1. Drain the tofu. 2. Using a potato smasher or fork, break up the tofu 3. Add all of the remaining ingredients and mix until they are well- Incorporated. 4. Add salt and pepper to taste. 5.
